What makes a great banana bread?
Ripe Bananas! I have made banana bread (in muffin form) for my children every month for their entire lives and I will tell you, ripe bananas are the secret. Stores love to sell green or slightly green bananas off the shelves. While that’s great for eating them with breakfast or slicing them for a treat, they’ll need some time on the countertop to ripen to be ready for banana bread.
If your home is anything like mine, ripe bananas are a frequent attendant. My children often love eating them one day and then decide they don’t like them anymore the next. This recipe is one sure way to use them up and make sure my kids still have a healthy snack.
Banana bread is a “quick” bread…
Banana bread is one of those amazingly quick breads that bake fairly quick. They rely on baking powder or baking soda rather than yeast, making them rise faster and cutting down their bake time.
This maple syrup banana bread recipe should take you about 30 minutes from start to finish. It’s great for an after school baking session or late night snack cravings. Also to note…this is an oven recipe, not a bread machine recipe.

Ingredients- Maple Syrup Banana Bread Recipe
- 1 stick butter softened
- 3/4 cup maple syrup
- 2 eggs
- 1 tsp baking soda
- 1/2 cup buttermilk (can substitute whole milk)
- 2 cups all purpose flour
- 2-3 ripe bananas mashed
- OPTIONAL- nuts or chocolate chips (1/2 cup)
Servings- Approx 12-15 muffins or 1 loaf
Instructions- Maple Syrup Banana Bread Recipe
- Preheat oven to 325 degrees F
- Mix together wet ingredients in large mixing bowl
- Mix together dry ingredients in seperate bowl, then add to wet ingredients
- Mix for 2-3 minutes until well combined
- If using muffin liners- ladle 1/4 cup of batter into each muffin liner
- If using loaf pan- grease the edges of your loaf pan and pour batter in
- Bake at 325 degrees F for 8-10 minutes for muffins, 30-40 minutes for loaf pans
- Can be checked with a tooth pick- Stick toothpick into the center. Finished baking when toothpick is clean
- Let chill on a cooling rack for about 10 minutes. Bread will be hot and needs to rest.

Tips and Tricks for Making Maple Syrup Banana Bread
Maple syrup is a great substitute for refined sugar. Learning the conversion ratio makes the biggest difference. Maple syrup should be substituted as 3/4 cup maple syrup to 1 cup of sugar. If substituting maple syrup for honey, the ration is 1 to 1.
Greasing the loaf pan is essential to making sure the loaf separates from the pan. Skipping this step or not doing it completely will result in the bread loaf sticking, leaving you with a mess.
Use a 1/4 cup measuring spoon to ladle the batter into muffin liners. This helps to keep it consistent and helps all the muffins turn out the same size.
Watch the bread as it bakes and nears the end of it’s bake time. The top should be slightly golden brown and look firm. If it looks soft or mushy, it needs more time.
