Let’s make a recipe for bacon grease mayonnaise! Seed oils are so common in most of the mayonnaise brands. Nearly all that my family was shopping for contained either canola, cottonseed, rapeseed, sunflower seed, or a mixture of all the above. Even those marketed as made with olive oil contained seed oils.
I found that most companies used these oils because they can be bleached and processed in a way that removes the oil flavor. Did you know that mayonnaise naturally takes on the flavor of whatever oil you use?
We decided that we were ditching seed oils and started making our own mayonnaise. This recipe for bacon grease mayonnaise has been our favorite so far. Yes, it does have the bacon grease flavor BUT we found that compared to olive oil and coconut oil, this one worked the best. I thought I would share it with you too!

Why Bacon Grease?
Bacon grease is a natural fat and so easy to use. We are constantly making crispy bacon for breakfast, meals, sides, and flavor add ins to other recipes, so we naturally have bacon grease on hand. If you look back to how past generations made foods such as mayonnaise, they always consisted of natural fats. Bacon is kind of a hero in that aspect around here. Bacon grease mayonnaise wins in our home!
There are so many processed additives to food these days. We have traded whole foods for convenience and it shows. I want to provide real food to my family without sacrificing nutrition to do so. There will be many along the way that do not agree with our stance on this, but that’s ok.

How do you make mayonnaise?
Mayonnaise is made out of egg yolks, vinegar, fat (oil), and other flavorings such as mustard or salt. Typically an immersion blender or a whisk is necessary to get the whipped consistency. You could also use a food processor. I use the immersion blender. I have found that bacon mayo will solidify a bit once refrigerated. Setting it out to room temperature typically allows it to spread just fine though.
Using apple cider vinegar works but we prefer to use our own homemade Apple Scrap Vinegar, and it’s wonderful in this recipe. The bacon grease mayonnaise will take on the flavor of the bacon grease, so you’ll want to add other flavorings to it so that it doesn’t taste like you’re licking the bottom of the bacon pan. Apple cider vinegar seems to help most with that.

Using fresh lemon or lime will also add some tang to your mayonnaise. It helps to balance out the flavor and adds a fresh taste to it. We prefer to use fresh limes or lemons (you can use either). We especially love this citrus press juicer.
Ways to use mayonnaise
Some family favorites that we love to make are:
- homemade chicken salad
- BLT’s
- Hoagie sandwiches with fresh deli meat, mayonnaise, and veggies
- Grilled cheese sandwiches
You can also use mayonnaise in other unconventional ways:
- egg wash on pastries (like pie crust)
- in frosting (makes it creamier)
- grilling meats (prevents sticking when applied to meat before searing)
- hair conditioner

Bacon Grease Mayonnaise
Bacon grease mayonnaise is a whole food, animal based mayonnaise recipe.
Ingredients
- 3 Egg yolks
- 1 cup liquid bacon grease
- 1/4 tsp salt
- 2 tsp apple cider vinegar
- 1 tsp fresh lemon or lime juice
- 1 tsp dijon mustard
Instructions
Whisk together egg yolks, vinegar, and citrus juice together with immersion blender or food processor.
Slowly drizzle the liquid bacon grease into the mixture keeping the mixture stirred constantly.
Add the dijon mustard and salt, stir in well.
